Ingredients

Salmon and Salad

  • 4 salmon fillets, about 150180 g each
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste
  • 5 cups kale, chopped
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/4 cup shaved Parmesan

Dressing

  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 garlic clove, minced
  • Salt and black pepper, to taste


Instructions

  4. Massage the Kale: Place the chopped kale in a large bowl, add a small amount of the dressing, and massage the leaves for 1–2 minutes to break down fibers and soften the texture.
  5. Combine the Salad: Add the cooked corn, halved cherry tomatoes, diced avocado, and shaved Parmesan to the kale, tossing gently to combine.
  6. Assemble the Salad: Arrange the grilled salmon fillets on top of the kale mixture for an attractive presentation.
