Description
Sweet grilled pineapple and smoky tofu are threaded onto skewers with colorful vegetables for a delicious vegan barbecue favorite. These kebabs are perfect for summer cookouts and easy weeknight meals.
Ingredients
Tofu and Marinade
- 14 oz (400 g) extra-firm tofu, pressed and cubed
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
Vegetables and Fruit
- 2 cups fresh pineapple chunks
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 red onion, cut into chunks

Instructions
- Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, maple syrup, smoked paprika, and garlic powder until well combined.
- Marinate the Tofu: Toss the cubed tofu gently in the marinade, ensuring each piece is coated thoroughly. Let the tofu sit in the marinade for 20 minutes to absorb flavors.
- Assemble the Kebabs: Thread the tofu, pineapple chunks, red and yellow bell peppers, and red onion pieces alternately onto the skewers to create colorful kebabs.
- Preheat the Grill: Heat your grill to medium-high to achieve perfect grilling temperature.
- Grill the Kebabs: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally to ensure even charring and cooking on all sides.
- Serve: Remove kebabs from grill and serve warm, optionally accompanied by rice or additional grilled vegetables.
Notes
- Soak wooden skewers in water for at least 30 minutes before grilling to prevent burning.
- Feel free to add extra vegetables like zucchini or mushrooms to the skewers for more variety.
