Description

Sweet grilled pineapple and smoky tofu are threaded onto skewers with colorful vegetables for a delicious vegan barbecue favorite. These kebabs are perfect for summer cookouts and easy weeknight meals.


Ingredients

Tofu and Marinade

  • 14 oz (400 g) extra-firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Vegetables and Fruit

  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red onion, cut into chunks

Equipment

  • Wooden or metal skewers (if wooden, soak in water prior to use)


Instructions

  1. Prepare the Marinade: In a bowl, whisk together olive oil, soy sauce, maple syrup, smoked paprika, and garlic powder until well combined.
  2. Marinate the Tofu: Toss the cubed tofu gently in the marinade, ensuring each piece is coated thoroughly. Let the tofu sit in the marinade for 20 minutes to absorb flavors.
  3. Assemble the Kebabs: Thread the tofu, pineapple chunks, red and yellow bell peppers, and red onion pieces alternately onto the skewers to create colorful kebabs.
  4. Preheat the Grill: Heat your grill to medium-high to achieve perfect grilling temperature.
  5. Grill the Kebabs: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally to ensure even charring and cooking on all sides.
  6. Serve: Remove kebabs from grill and serve warm, optionally accompanied by rice or additional grilled vegetables.
