Salmon and Marinade

Instructions

  1. Prepare Salmon Chunks: Cut the salmon into evenly sized chunks to ensure uniform cooking. Handle the fish gently to maintain its texture.
  2. Make the Marinade: In a bowl, whisk together olive oil, fresh lemon juice, lemon zest, minced garlic, Dijon mustard, honey, chopped parsley, dill, salt, and black pepper until well combined.
  3. Marinate Salmon: Add the salmon chunks to the marinade and gently toss to coat all pieces evenly. Cover and refrigerate for 20 to 30 minutes to infuse flavors without over-marinating.
  4. Prepare Vegetables and Skewers: Cut bell peppers and red onion into pieces similar in size to the salmon chunks. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  5. Assemble Skewers: Thread the salmon, bell pepper, and red onion pieces alternately onto the skewers to create colorful and balanced kebabs.
