  • 6 cups romaine lettuce, chopped

  • 1/4 teaspoon salt
  • 23 tablespoons water, as needed


Instructions

  1. Prepare the marinade: In a small bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper to create the flavorful marinade for the chicken.
  2. Marinate the chicken: Coat the boneless, skinless chicken breasts evenly with the marinade mixture and let them soak for 15–20 minutes to absorb the spices and lime flavor.
  3. Grill the chicken: Heat a grill or grill pan over medium-high heat. Grill the marinated chicken breasts for 5–7 minutes on each side, until fully cooked through and juices run clear.
  4. Rest and slice chicken: Remove the chicken from the grill and allow it to rest for 5 minutes to retain juices, then slice into strips or bite-sized pieces.
