Description
Grilled Cauliflower Steaks are thick, hearty slices of cauliflower grilled until tender and lightly charred, then enhanced with a bright lemon-garlic herb sauce. This dish makes a flavorful vegetarian main course or side dish, perfect for summer grilling or a healthy, satisfying meal.
Ingredients
Cauliflower Steaks
- 1 large head cauliflower
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 garlic cloves, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Garnish
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon grated Parmesan, optional
Instructions
- Preheat Grill: Preheat your grill to medium-high heat to ensure even cooking and nice grill marks on the cauliflower steaks.
- Prepare Cauliflower: Remove the outer leaves of the cauliflower while keeping the stem intact. Then cut it into 3 to 4 thick slices about 1 inch (2.5 cm) thick to create sturdy steaks that hold together on the grill.
- Make Marinade: In a small bowl, combine olive oil, fresh lemon juice, minced garlic, smoked paprika, cumin, Italian seasoning, salt, and black pepper to create a flavorful marinade.
- Brush Cauliflower: Generously brush both sides of each cauliflower steak with the marinade, making sure they are well coated for maximum flavor.
- Grill Cauliflower Steaks: Place the cauliflower steaks on the preheated grill. Grill for approximately 5 to 7 minutes on each side, turning carefully to avoid breaking them, until they are tender and have a nice charred surface.
- Garnish and Serve: Remove the grilled steaks from the grill, sprinkle with fresh chopped parsley and add grated Parmesan if desired. Serve warm, accompanied by lemon wedges for an extra bright flavor.
Notes
- Don’t cut the cauliflower too thin or the steaks may fall apart during grilling.
- Add a spoonful of chimichurri or tahini sauce before serving for enhanced flavors.
- Serve with quinoa, couscous, or a fresh salad to make it a complete meal.
- For a spicy kick, add chili flakes or cayenne pepper to the marinade.
