A rich and comforting beef stroganoff featuring tender strips of beef, earthy mushrooms, and a creamy sauce served over egg noodles, inspired by Gordon Ramsay’s classic recipe.
Ingredients
Beef and Sauce
- 1½ lbs beef sirloin or tenderloin, thinly sliced
- 2 tbsp olive oil
- 2 tbsp butter
- 1 medium onion, finely sliced
- 8 oz cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- ½ cup sour cream
- Salt and black pepper, to taste

- 12 oz egg noodles, cooked
- Fresh parsley, chopped, for garnish
Instructions
- Season the beef: Generously season the thinly sliced beef sirloin or tenderloin with salt and black pepper to enhance the flavor before cooking.
- Sear the beef: Heat 2 tablespoons of olive oil in a large skillet over high heat. Quickly sear the beef strips until browned on all sides but not fully cooked through, then remove the beef and set it aside to rest.
- Sauté onions and mushrooms: In the same skillet, add 2 tablespoons of butter. Once melted, add the finely sliced onions and sliced cremini mushrooms. Cook over medium heat until the onions are softened and the mushrooms are golden brown, about 5–7 minutes.
- Add garlic: Stir in the minced garlic and cook for 30 seconds, allowing the garlic to release its aroma without burning.
- Create the sauce base: Mix in 1 tablespoon of Dijon mustard and 1 tablespoon of Worcestershire sauce, then pour in 1 cup of beef broth. Stir well to combine and let the sauce simmer gently for 5 minutes to reduce slightly and intensify flavors.
- Incorporate sour cream: Reduce the heat to low and gradually stir in ½ cup of sour cream until the sauce is creamy and well blended. Make sure the heat is low to prevent the sour cream from curdling.
- Reheat the beef: Return the seared beef strips to the skillet with the sauce. Cook for 2 to 3 minutes more, just until the beef is warmed through and tender.
- Serve: Spoon the beef stroganoff over cooked 12 oz egg noodles. Garnish with freshly chopped parsley for a fresh finish and serve immediately.
Notes
- Avoid overcooking the beef to keep it tender and juicy.
- Add sour cream over low heat to prevent curdling and maintain the creaminess of the sauce.
- Use cremini mushrooms for their earthy flavor; however, button mushrooms can be a substitute.
- Serve immediately to enjoy the best texture and flavor of the dish.
