Ingredients
Steaks
- 2 ribeye or New York strip steaks (about 12 oz each)
- 2 tbsp olive oil
- Salt and freshly ground black pepper, to taste
Garlic Butter Rosemary Sauce
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 2 sprigs fresh rosemary, finely chopped
- 1 tsp fresh thyme leaves (optional)
Serving
- Lemon wedges, for serving (optional)
Instructions
- Prepare the Steaks: Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature, ensuring even cooking.
- Season the Steaks: Pat the steaks dry with paper towels, then rub them evenly with olive oil. Season generously with salt and freshly ground black pepper on both sides.
- Preheat the Grill: Heat your grill to high heat to get a nice sear on the steaks.
- Grill the Steaks: Place the steaks on the grill and cook for 4–6 minutes per side, depending on thickness and desired doneness, until they reach your preferred internal temperature.
- Make Garlic Rosemary Butter: While the steaks are grilling, melt the butter in a small saucepan over medium heat. Stir in the minced garlic and chopped rosemary and cook for about 1 minute until fragrant. If using, add the fresh thyme leaves at this point.
- Rest the Steaks: Remove the steaks from the grill and let them rest on a cutting board or plate for 5–10 minutes. This helps retain their juices and ensures tenderness.
- Serve: Spoon the warm garlic rosemary butter over the steaks just before serving. Optionally, serve with lemon wedges for a fresh citrus finish.
Notes
- Use a meat thermometer for precise doneness (e.g., 130°F for medium-rare).
- Letting the steaks rest helps retain their natural juices, making them more tender and flavorful.
- Delicious served with grilled vegetables, roasted potatoes, or a fresh green salad for a complete meal.
- For an extra smoky flavor, consider adding wood chips to your grill.
- The optional thyme leaves add an additional layer of herbal aroma but can be omitted if unavailable.
