Ingredients
Meat
- 1½ lbs sirloin steak, cut into bite-sized pieces
Vegetables
- 1 lb baby potatoes, halved
- 2 tbsp fresh parsley, chopped
- 4 cloves garlic, minced
Seasonings & Oils
- 3 tbsp butter
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Season the Potatoes: Toss the halved baby potatoes with olive oil, paprika, half the salt, and half the black pepper to evenly coat them in seasoning.
- Roast the Potatoes: Spread the potatoes on a baking sheet and roast in a preheated oven at 425°F (220°C) for 25–30 minutes, until the potatoes are golden brown and tender inside.
- Prepare the Beef Bites: While the potatoes are roasting, season the sirloin steak pieces with the remaining salt, black pepper, and Italian seasoning to infuse flavor.
- Sear the Beef: Melt butter in a large skillet over medium-high heat, then add the seasoned beef bites and cook for 3–4 minutes until they develop a nice brown sear on all sides.
- Add Garlic: Add minced garlic to the skillet with the beef and cook for an additional 1 minute, stirring frequently to prevent burning and to release the garlic’s aroma.
- Combine Potatoes and Beef: Transfer the roasted potatoes to the skillet with the garlic butter beef bites, tossing everything together so the potatoes get coated in the flavorful butter sauce.
- Garnish and Serve: Sprinkle freshly chopped parsley over the dish for a fresh finish and serve immediately while hot.
Notes
- Yukon Gold potatoes can be used as a great alternative to baby potatoes for roasting.
- To ensure the beef bites get a proper sear, avoid overcrowding the skillet; cook in batches if necessary.
