Description

Fried Chicken Popsicles are crispy, juicy chicken bites served on wooden sticks, making them a fun, handheld appetizer perfect for parties, game days, and family gatherings. These flavorful chicken pieces are marinated in a spiced buttermilk mix, coated in a crispy flour and cornstarch batter, and deep-fried to golden perfection. Serve them with your favorite dipping sauces like honey mustard, barbecue sauce, or ranch for an irresistible snack everyone will love.

Ingredients

Chicken & Marinade

  • lbs boneless chicken thighs or breasts, cut into large chunks
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper (optional)
  • Salt and black pepper, to taste

Breading

  • 1½ cups all-purpose flour
  • ½ cup cornstarch

For Frying

  • Vegetable oil, for frying
  • 16 wooden popsicle sticks

For Serving

  • Honey mustard, barbecue sauce, or ranch dressing

Instructions

  1. Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, cayenne pepper (if using), salt, and black pepper. Add the chicken chunks and ensure they are fully submerged. Cover and refrigerate for at least 1 hour to tenderize and flavor the meat.
  2. Prepare the Oil: Heat vegetable oil in a deep fryer or large heavy-bottomed pot to 350°F (175°C). Use enough oil to fully submerge the chicken pieces for even cooking.
  3. Mix the Breading: In a shallow bowl or dish, whisk together the all-purpose flour and cornstarch until well combined. This mixture will create a crispy coating.
  4. Coat the Chicken: Remove each piece of chicken from the buttermilk marinade, letting excess drip off. Dredge thoroughly in the flour-cornstarch mixture, ensuring a full coating. For extra crispiness, you may double-coat by dipping back briefly into the buttermilk and re-dusting with the flour mixture.
  5. Fry the Chicken: Carefully lower the coated chicken pieces into the hot oil in batches, avoiding overcrowding. Fry for 5 to 7 minutes, turning occasionally to brown evenly, until golden brown and the internal temperature reaches 165°F (74°C).
  6. Drain and Insert Sticks: Using a slotted spoon or tongs, remove the fried chicken and place on paper towels to drain excess oil. While still warm, insert a wooden popsicle stick into each piece, making them easy to hold and eat.
  7. Serve: Arrange the chicken popsicles on a serving platter and provide small bowls of honey mustard, barbecue sauce, or ranch dressing for dipping. Serve immediately to enjoy the crispy texture.

Notes

  • For an extra crispy crust, double-coat the chicken by dipping it back into the marinade and then the flour mixture a second time before frying.
  • Keep cooked chicken popsicles warm in a low oven (about 200°F or 95°C) on a baking sheet until ready to serve.
  • These popsicles are delicious paired with spicy mayo, ranch dressing, or honey mustard dipping sauces.
  • Be careful not to overcrowd the frying oil to maintain temperature and crispness.
