Instructions

  1. Season Chicken: Pat the chicken thighs dry and season both sides generously with salt and black pepper to enhance flavor.

  5. Cook Covered: Cover the pot with a lid and let the casserole simmer gently for 35-40 minutes, or until the chicken is cooked through and tender, and the vegetables are fully cooked.
  6. Finish and Serve: Remove the bay leaf, adjust seasoning with salt and pepper if needed. Garnish with fresh chopped parsley and serve the casserole warm, ideally with crusty bread on the side.
