Instructions
- Season Chicken: Pat the chicken thighs dry and season both sides generously with salt and black pepper to enhance flavor.
- Brown Chicken: Heat 2 tablespoons of olive oil in a heavy pot or casserole dish over medium-high heat. Add the chicken thighs and brown them well on all sides, about 5-7 minutes total. Remove and set aside.

- Combine and Simmer: Return the browned chicken to the pot with the vegetables. Pour in 2 cups of chicken broth, add 1 teaspoon thyme and 1 bay leaf. Bring the mixture to a gentle simmer.
- Cook Covered: Cover the pot with a lid and let the casserole simmer gently for 35-40 minutes, or until the chicken is cooked through and tender, and the vegetables are fully cooked.
- Finish and Serve: Remove the bay leaf, adjust seasoning with salt and pepper if needed. Garnish with fresh chopped parsley and serve the casserole warm, ideally with crusty bread on the side.
