Description

These Easy Sheet Pan Fajitas are a quick and flavorful dinner made with seasoned chicken, colorful bell peppers, and onions roasted together on one pan. Perfect for busy weeknights, this recipe offers minimal cleanup with maximum flavor, featuring a smoky and vibrant blend of spices and fresh lime juice.

Ingredients

Protein and Vegetables

  • lbs boneless, skinless chicken breasts, sliced into strips
  • 3 bell peppers (red, yellow, and green), sliced
  • 1 large onion, sliced

Seasonings and Oils

  • 3 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper

Additional

  • 1 lime, sliced
  • Flour or corn tortillas, for serving
  • Optional toppings: sour cream, guacamole, salsa, cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s hot enough to roast the chicken and vegetables perfectly.
  2. Prepare Sheet Pan: Line a large sheet pan with parchment paper for easy cleanup and to prevent sticking.
  3. Arrange Ingredients: Place the sliced chicken breasts, bell peppers, and onion evenly spaced on the sheet pan.
  4. Season: Drizzle the olive oil over the chicken and vegetables. Sprinkle chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper evenly across. Toss everything thoroughly to coat all pieces well.
  5. Spread Evenly: Spread the chicken and vegetables into a single layer on the sheet pan to ensure even roasting.
  6. Roast: Place the sheet pan in the oven and roast for 20–25 minutes. Stir halfway through roasting to promote even cooking. The chicken should be cooked through and the vegetables tender.
  7. Add Lime Juice: Remove from the oven and squeeze fresh lime juice over the fajita mixture, adding brightness and acidity.
  8. Serve: Serve the roasted fajita filling warm in flour or corn tortillas with your favorite optional toppings such as sour cream, guacamole, salsa, and cilantro.

Notes

  • Shrimp or steak can be substituted for chicken to vary the protein while keeping the dish equally tasty.
  • For an extra charred flavor, broil the fajitas during the last 2–3 minutes of cooking but watch carefully to avoid burning.
  • Leftover fajitas are delicious when repurposed as toppings for rice bowls or mixed salads for a quick meal.
