Description

These Easy Potato Fritters are crispy on the outside, tender on the inside, and made with simple pantry ingredients. Grated potatoes are combined with onion, egg, and a few seasonings, then pan-fried until golden brown. They’re perfect for breakfast, brunch, a side dish, or a quick family snack.

Ingredients

Vegetables

  • 4 medium russet potatoes, peeled and grated
  • ½ small yellow onion, grated
  • 2 tablespoons fresh parsley, chopped

Dry Ingredients

  • ¼ cup all-purpose flour
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Wet Ingredients

  • 1 large egg
  • ¼ cup vegetable oil, for frying

Instructions

  1. Prepare Potatoes: Grate the potatoes and place them in a clean kitchen towel. Squeeze firmly to remove as much excess moisture as possible, which helps ensure crispy fritters.
  2. Combine Ingredients: Place the grated potatoes and onion in a large bowl. Add the egg, flour, Parmesan cheese, garlic powder, paprika, salt, pepper, and chopped parsley. Mix everything well until fully combined.
  3. Heat Oil: Warm the vegetable oil in a large skillet over medium heat to ensure it is hot enough to crisp the fritters without burning.
  4. Form and Cook Fritters: Scoop about ¼ cup of the potato mixture into the skillet for each fritter. Flatten gently with the back of a spoon to even thickness. Cook for 3–4 minutes on each side or until they turn golden brown and crispy.
  5. Drain Excess Oil: Transfer the cooked fritters to a paper towel-lined plate to drain any excess oil and maintain their crispiness.
  6. Repeat Cooking: Continue cooking the remaining mixture in batches, adding more oil as necessary to keep the skillet well-lubricated for frying.
  7. Serve: Serve the potato fritters warm alongside sour cream, Greek yogurt, applesauce, or your favorite dipping sauce for added flavor.

Notes

  • Removing as much moisture as possible from the potatoes is the key to crispy fritters.
  • Do not overcrowd the skillet; cook in batches if necessary to ensure even cooking.
  • For extra flavor, add chopped green onions, fresh chives, or shredded cheddar cheese to the mixture.
  • You can make smaller fritters for a kid-friendly appetizer or snack size.
  • Serve immediately for the best texture and crispiness.
