Description

This Easy Lemon Ricotta Pasta & Spinach is a creamy and bright dish that comes together in just 20 minutes. Combining ricotta cheese, fresh baby spinach, Parmesan, and zesty lemon, this pasta offers a light yet satisfying meal perfect for busy weeknights or quick dinners. The addition of fresh garlic enhances the flavor while the reserved pasta water helps create a luscious sauce that coats every bite.

Ingredients

Pasta and Greens

  • 12 oz (340 g) pasta (penne, spaghetti, or fettuccine)
  • 2 cups baby spinach

Cheese and Dairy

  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese

Flavors and Seasonings

  • 2 tablespoons olive oil
  • Zest of 1 lemon
  • 2 tablespoons lemon juice
  • 2 garlic cloves, minced
  • Salt and black pepper, to taste

Garnish

  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Before draining, reserve ½ cup of the pasta cooking water, then drain the pasta thoroughly.
  2. Prepare the Sauce: In a large mixing bowl, whisk together the ricotta cheese, grated Parmesan, olive oil, lemon zest, lemon juice, minced garlic, salt, and black pepper until smooth and creamy.
  3. Combine Pasta and Spinach: Add the hot, drained pasta and baby spinach to the bowl with the ricotta mixture. Toss everything together vigorously; the heat from the pasta will gently wilt the spinach.
  4. Create a Creamy Sauce: Gradually add the reserved pasta water as needed and continue tossing until the sauce reaches a creamy consistency that evenly coats the pasta and spinach.
  5. Garnish and Serve: Transfer the pasta to serving bowls or plates. Garnish with fresh basil or parsley and a sprinkle of extra Parmesan cheese before serving immediately for the best taste and texture.

Notes

  • Add grilled chicken or shrimp for extra protein and a heartier meal.
  • Use whole wheat pasta to increase fiber content and add a nutty flavor.
  • Best served immediately while warm for optimal texture and flavor.
