Whiskey Cream Sauce
- 1/2 cup Irish whiskey
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tsp Dijon mustard
- 1/2 tsp thyme
- Fresh parsley for garnish
Instructions
- Season Chicken: Season the chicken breasts evenly with salt and pepper on both sides to enhance their flavor during cooking.
- Cook Chicken: Heat butter and olive oil together in a pan over medium heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the pan and set aside.
- Sauté Garlic: In the same pan, add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
- Add Whiskey: Carefully pour in the Irish whiskey and allow it to simmer for 2 to 3 minutes to reduce slightly and cook off most of the alcohol, concentrating the flavor.
- Make Sauce: Stir in the chicken broth, heavy cream, Dijon mustard, and thyme into the pan. Mix well and let the sauce simmer gently until it thickens, about 5-7 minutes.
- Combine Chicken and Sauce: Return the cooked chicken breasts to the pan and spoon the whiskey cream sauce over them, coating well. Simmer together for a couple of minutes to meld flavors and reheat the chicken.
- Garnish and Serve: Sprinkle freshly chopped parsley on top for a burst of color and freshness. Serve immediately with your choice of mashed potatoes, rice, or crusty bread.
