Description

A rich and comforting Irish-inspired chicken dish simmered in a smooth whiskey cream sauce with garlic and herbs—perfect for a cozy yet elegant meal.

Ingredients

Chicken

  • 2 chicken breasts
  • Salt and pepper to taste

For Cooking

  • 2 tbsp butter
  • 1 tbsp olive oil
  • 3 cloves garlic, minced

Whiskey Cream Sauce

  • 1/2 cup Irish whiskey
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp Dijon mustard
  • 1/2 tsp thyme
  • Fresh parsley for garnish

Instructions

  1. Season Chicken: Season the chicken breasts evenly with salt and pepper on both sides to enhance their flavor during cooking.
  2. Cook Chicken: Heat butter and olive oil together in a pan over medium heat. Add the chicken breasts and cook until they are golden brown and cooked through, about 6-7 minutes per side. Remove the chicken from the pan and set aside.
  3. Sauté Garlic: In the same pan, add the minced garlic and sauté until fragrant, about 1 minute, being careful not to burn it.
  4. Add Whiskey: Carefully pour in the Irish whiskey and allow it to simmer for 2 to 3 minutes to reduce slightly and cook off most of the alcohol, concentrating the flavor.
  5. Make Sauce: Stir in the chicken broth, heavy cream, Dijon mustard, and thyme into the pan. Mix well and let the sauce simmer gently until it thickens, about 5-7 minutes.
  6. Combine Chicken and Sauce: Return the cooked chicken breasts to the pan and spoon the whiskey cream sauce over them, coating well. Simmer together for a couple of minutes to meld flavors and reheat the chicken.
  7. Garnish and Serve: Sprinkle freshly chopped parsley on top for a burst of color and freshness. Serve immediately with your choice of mashed potatoes, rice, or crusty bread.

Notes

  • Use a good-quality Irish whiskey for the best flavor in the sauce.
  • This dish pairs well with mashed potatoes, rice, or crusty bread to soak up the delicious sauce.
  • Allowing the alcohol to cook off during simmering results in a smoother taste without harsh alcohol notes.
