Description

A budget-friendly and hearty casserole featuring layers of seasoned ground beef, thinly sliced potatoes, creamy mushroom soup, and melted cheddar cheese. This Easy Hobo Casserole is perfect for a simple, satisfying family meal that requires minimal prep and uses pantry staples.

Ingredients

Main Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 4 medium potatoes, thinly sliced
  • 1 can cream of mushroom soup (10.5 oz)
  • ½ cup milk
  • 1½ cups shredded cheddar cheese

Seasonings

  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the casserole.
  2. Cook Beef Mixture: In a skillet over medium heat, brown the ground beef along with the diced onion until the meat is fully cooked and the onion is soft. Season with salt, pepper, and garlic powder, then remove from heat.
  3. Prepare Baking Dish: Grease a 9×13-inch baking dish to prevent sticking.
  4. Layer Potatoes: Arrange half of the thinly sliced potatoes evenly on the bottom of the baking dish.
  5. Add Beef Layer: Spread the cooked ground beef and onion mixture evenly over the potatoes.
  6. Top with Remaining Potatoes: Layer the remaining potatoes over the beef mixture, covering it completely.
  7. Mix and Pour Soup: In a bowl, whisk together the cream of mushroom soup and milk until smooth, then pour this mixture evenly over the layered casserole.
  8. Bake Covered: Cover the baking dish with aluminum foil and bake for 60 minutes, allowing the potatoes to soften and flavors to meld.
  9. Add Cheese and Finish Baking: Remove the foil, sprinkle the shredded cheddar cheese over the top, and bake uncovered for an additional 15 minutes until the cheese is melted and bubbly.
  10. Rest Before Serving: Allow the casserole to stand for 10 minutes to set before slicing and serving.

Notes

  • Cream of chicken soup can be used as a substitute for cream of mushroom soup.
  • Slice potatoes very thinly for even cooking throughout the casserole.
  • Adding mixed vegetables such as peas, carrots, or corn can boost the nutritional value.
