Description

This easy ground beef dinner is a quick and satisfying one-pan meal featuring seasoned beef, vegetables, and a savory tomato sauce. Perfect for busy weeknights when you need a hearty and flavorful meal on the table fast, it combines colorful vegetables with tender ground beef in a simple yet delicious skillet dish.

Ingredients

Beef and Seasoning

  • 1 lb ground beef
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste

Vegetables and Aromatics

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, diced

Sauce

  • 1 (14.5 oz) can diced tomatoes

Garnish

  • 2 tbsp chopped fresh parsley

Instructions

  1. Heat olive oil: Heat the olive oil in a large skillet over medium heat to prepare for sautéing the vegetables and beef.
  2. Sauté onion: Add the diced onion to the skillet and cook for 3 to 4 minutes until softened and translucent, which builds the base flavor of the dish.
  3. Add garlic: Stir in the minced garlic and cook for about 30 seconds to release its aroma without burning.
  4. Cook ground beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula to ensure even cooking and no large clumps.
  5. Add vegetables: Stir in the diced red bell pepper and zucchini, and cook together for 5 minutes to slightly soften the vegetables while retaining some texture.
  6. Add tomatoes and seasonings: Pour in the canned diced tomatoes, sprinkle the Italian seasoning, paprika, salt, and black pepper over the mixture, stirring to combine all ingredients evenly.
  7. Simmer: Reduce heat and simmer the mixture for 10 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  8. Garnish and serve: Remove from heat, garnish with fresh chopped parsley, and serve warm as is or over your choice of rice, pasta, or mashed potatoes.

Notes

  • Serve this dish over rice, pasta, or mashed potatoes for a more hearty meal.
