- 2 cups corn kernels (fresh or grilled)
- 1 cup cherry tomatoes, diced
- ¼ cup red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- Salt to taste
Instructions
- Preheat the Grill: Preheat your grill to medium-high heat, ensuring it’s hot enough to sear the salmon properly.
- Prepare the Salmon: Brush each salmon fillet with olive oil, then season evenly with garlic powder, paprika, salt, and black pepper.
- Grill the Salmon: Place the salmon fillets on the grill and cook for 4 to 5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
- Make the Corn Salsa: In a bowl, combine the corn kernels, diced cherry tomatoes, finely chopped red onion, chopped cilantro, lime juice, and salt. Mix well to combine all the fresh flavors.
- Serve: Spoon the fresh corn salsa over the grilled salmon fillets and serve immediately for a vibrant and delicious meal.
Notes
- Fresh grilled corn kernels add a nice smoky flavor to the salsa, but fresh raw corn also works well.
- This dish pairs perfectly with side dishes such as rice, quinoa, or a crisp green salad.
