A creamy and comforting broccoli cheddar soup made with simple ingredients. Perfect for a quick and satisfying meal that combines tender broccoli, melted sharp cheddar cheese, and a smooth, velvety base.
Ingredients
Vegetables
- 2 cups broccoli florets
- 1 small onion, chopped
Dairy & Fats
- 2 tablespoons butter
- 2 cups milk
- 1 1/2 cups shredded cheddar cheese
Pantry
- 2 tablespoons flour
- 1 cup chicken or vegetable broth
- Salt and black pepper to taste
Instructions
- Melt Butter: Melt butter in a pot over medium heat, allowing it to fully liquefy but not brown.
- Sauté Onion: Add the chopped onion to the pot and cook until soft and translucent, about 3-5 minutes, stirring occasionally to prevent burning.
- Add Flour: Stir in the flour and cook for 1 minute, stirring constantly to form a roux which will thicken the soup.
- Incorporate Liquids: Gradually whisk in the milk and broth, mixing well to ensure the mixture is smooth without lumps.
- Add Broccoli and Simmer: Add the broccoli florets and bring the soup to a gentle simmer. Cook until the broccoli is tender, approximately 10-12 minutes.
- Add Cheese: Stir in the shredded cheddar cheese until fully melted and the soup is creamy. Avoid boiling after adding cheese to prevent curdling.
- Optional Blending: Blend slightly with an immersion blender if a smoother texture is desired, leaving some broccoli chunks for texture.
- Season and Serve: Season the soup with salt and black pepper to taste and serve warm.
Notes
- Do not boil the soup after adding cheese to avoid separation and curdling.
- Use sharp cheddar cheese for a stronger, richer flavor.
- Adding carrots can introduce extra color and a subtle sweetness to the soup.
