Description

This Delicious Sofritas Chipotle recipe features crumbled extra-firm tofu simmered in a smoky, spicy tomato and chipotle sauce. It offers a flavorful and hearty plant-based filling perfect for burritos, tacos, bowls, salads, and meal prep. The combination of chipotle peppers, adobo sauce, and spices creates an authentic Mexican-inspired taste with a balanced smoky heat.

Ingredients

Tofu and Cooking Base

  • 14 oz (400 g) extra-firm tofu, pressed and crumbled
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped

Sauce and Seasonings

  • 2 chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 2 tablespoons tomato paste
  • ½ cup vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice

Instructions

  1. Heat the olive oil: In a skillet over medium heat, heat the olive oil until shimmering, preparing the pan for sautéing.
  2. Sauté onion and garlic: Add the chopped onion to the skillet and cook until softened and translucent, about 3-5 minutes. Then add the minced garlic, cooking for about 1 minute until fragrant.
  3. Make the sauce: In a blender or food processor, combine the chipotle peppers, adobo sauce, tomato paste, vegetable broth, cumin, smoked paprika, oregano, soy sauce, and lime juice. Blend until you achieve a smooth, well-incorporated sauce.
  4. Add tofu to skillet: Add the crumbled tofu to the sautéed onion and garlic mixture, stirring to combine and warm through slightly.
  5. Pour sauce over tofu: Pour the blended chipotle tomato sauce evenly over the tofu in the skillet. Stir thoroughly to ensure the tofu is evenly coated with the sauce.
  6. Simmer the sofritas: Reduce the heat to low and let the mixture simmer gently for 15-20 minutes, stirring occasionally, until the sauce thickens and most of the liquid has reduced, infusing the tofu with smoky and spicy flavor.
  7. Serve and enjoy: Once thickened, remove from heat and serve the sofritas as a filling for burritos, tacos, bowls, or salads according to your preference.

Notes

  • Press the tofu well to remove excess moisture for the best texture and better absorption of flavors.
  • Reduce the amount of chipotle peppers if you prefer a milder spicy flavor.
  • Store leftover sofritas in an airtight container in the refrigerator for up to 4 days.
