Ingredients
Chicken and Seasoning
- 700 g boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, sliced
- 1 cup chicken broth
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Sauce and Greens
- ¾ cup heavy cream
- ½ cup grated Parmesan cheese
- 2 cups fresh spinach
- 2 tbsp fresh basil or parsley, chopped
Instructions
- Prepare the chicken: Place the chicken breasts in the crockpot to form the base of the dish.
- Add flavorings: Add minced garlic, sliced sun-dried tomatoes, chicken broth, Italian seasoning, paprika, salt, and black pepper over the chicken. Ensure these ingredients are evenly distributed.
- Slow cook: Cover the crockpot and cook on LOW for 4–5 hours or on HIGH for 2–3 hours until the chicken is thoroughly cooked and tender.
- Slice the chicken: Remove the chicken breasts from the crockpot and slice them into pieces for easier serving and better sauce absorption.
- Make the sauce: Stir the heavy cream and grated Parmesan cheese into the cooking liquid left in the crockpot, mixing to create a creamy sauce.
- Add spinach: Add fresh spinach to the crockpot and stir until the spinach is wilted and incorporated into the sauce.
- Combine and coat: Return the sliced chicken to the crockpot and gently coat the pieces with the creamy Tuscan sauce.
- Finish and serve: Garnish with chopped fresh basil or parsley before serving for a burst of color and fresh flavor.
