Ingredients

Chicken and Seasoning

  • 700 g boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • ½ cup sun-dried tomatoes, sliced
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Sauce and Greens

  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 2 tbsp fresh basil or parsley, chopped


Instructions

  1. Prepare the chicken: Place the chicken breasts in the crockpot to form the base of the dish.
  2. Add flavorings: Add minced garlic, sliced sun-dried tomatoes, chicken broth, Italian seasoning, paprika, salt, and black pepper over the chicken. Ensure these ingredients are evenly distributed.

  4. Slice the chicken: Remove the chicken breasts from the crockpot and slice them into pieces for easier serving and better sauce absorption.
  5. Make the sauce: Stir the heavy cream and grated Parmesan cheese into the cooking liquid left in the crockpot, mixing to create a creamy sauce.
  6. Add spinach: Add fresh spinach to the crockpot and stir until the spinach is wilted and incorporated into the sauce.
  7. Combine and coat: Return the sliced chicken to the crockpot and gently coat the pieces with the creamy Tuscan sauce.
