Description

A light and comforting summer squash soup made with fresh zucchini, yellow squash, onions, garlic, and herbs. This easy crockpot recipe is creamy, flavorful, and packed with vegetables, perfect for a healthy lunch or side dish.


Ingredients

Vegetables

  • 3 medium zucchini, chopped
  • 3 medium yellow squash, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup diced tomatoes

Liquids & Fats

  • 4 cups vegetable broth
  • 2 tbsp olive oil
  • ½ cup plain Greek yogurt or heavy cream, optional

Herbs & Seasoning

  • 1 tsp dried thyme
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice


Instructions

  1. Prepare ingredients: Wash and chop the zucchini and yellow squash into medium pieces. Dice the onion and mince the garlic cloves.
  2. Add ingredients to the crockpot: Place the chopped zucchini, yellow squash, diced onion, minced garlic, diced tomatoes, and vegetable broth into the crockpot.
  3. Season the soup: Add dried thyme, dried basil, salt, black pepper, and olive oil to the crockpot. Stir everything together to combine well.
  4. Cook the soup: Cover the crockpot and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the vegetables are very tender.
  5. Blend the soup: Use an immersion blender to blend the soup until smooth, or blend partially if you prefer a chunkier texture.
  6. Add creaminess: Stir in the plain Greek yogurt or heavy cream if using, to add a creamy texture to the soup.
  7. Finish with lemon and seasoning: Add the lemon juice and adjust salt and pepper to taste.
  8. Garnish and serve: Sprinkle fresh chopped parsley on top and serve the soup warm.

  • For a dairy-free version, use coconut milk or omit the creamy ingredient entirely.
  • Add fresh spinach during the last 15 minutes of cooking for an extra boost of greens.
