Ingredients

Beef and Seasoning

  • 4 cloves garlic, minced

  • ½ cup pitted Kalamata olives

Liquids and Tomatoes

  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 2½ cups beef broth
  • 1 tbsp red wine vinegar

  • 1 tsp dried oregano
  • 1 tsp dried thyme

Instructions

  1. Prepare and season beef: Pat the beef cubes dry with paper towels and season them evenly with salt and black pepper to enhance flavor before cooking.
  2. Brown the beef: Heat olive oil in a large skillet over medium-high heat. Brown the beef cubes in batches for 2–3 minutes per side until a deep caramelized crust forms. This step adds flavor depth. Transfer browned beef to the slow cooker.
  3. Add vegetables and aromatics: Place chopped onion, sliced carrots, celery, chopped red bell pepper, and minced garlic into the slow cooker with the beef.
  4. Add tomatoes and seasonings: Stir in diced tomatoes, tomato paste, beef broth, dried oregano, thyme, smoked paprika, ground cumin, and bay leaf, ensuring everything is well combined.
  5. Slow cook the stew: Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender and flavors meld beautifully.
  6. Add olives: Stir in pitted Kalamata olives during the last 20–30 minutes of cooking to maintain their texture and impart briny flavor.
