Description

Tender chicken slow-cooked in a sweet and tangy honey mustard sauce made with Dijon mustard, honey, garlic, and herbs. An easy, flavorful dinner that requires minimal preparation, perfect for a comforting weeknight meal.

Ingredients

Chicken

  • 700 g boneless, skinless chicken breasts or thighs

Sauce

  • ⅓ cup Dijon mustard
  • ¼ cup honey
  • ¼ cup chicken broth
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper

Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

  1. Prepare the crockpot: Place the chicken breasts or thighs in the bottom of the crockpot in an even layer to ensure even cooking.
  2. Mix the sauce: In a small bowl, whisk together Dijon mustard, honey, chicken broth, minced garlic, olive oil, dried thyme, paprika, salt, and black pepper until fully combined to create a delicious honey mustard sauce.
  3. Add the sauce to the chicken: Pour the prepared sauce evenly over the chicken, making sure each piece is well coated for maximum flavor.
  4. Slow cook the chicken: Cover the crockpot with the lid and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours, until the chicken is tender and cooked through to an internal temperature of at least 165°F (74°C).
  5. Rest the chicken: Once cooked, remove the chicken from the crockpot and let it rest for a few minutes to lock in juices and improve texture.
  6. Serve and garnish: Spoon some of the cooking sauce over the chicken and sprinkle with freshly chopped parsley. Serve alongside roasted vegetables, rice, potatoes, or a fresh salad for a complete meal.

Notes

  • Chicken thighs retain more moisture and are especially juicy when cooked in the crockpot, making them a great choice for this recipe.
  • Add a splash of lemon juice to the sauce before cooking for an extra bright and fresh flavor contrast.
  • If you prefer a thicker sauce, carefully transfer the cooking liquid to a saucepan and simmer on the stovetop for a few minutes until it reduces and thickens.
  • Ensure the chicken is fully cooked through for safe consumption by checking its internal temperature.
