Description

Crock-Pot Lemonade Chicken is a deliciously tender and juicy chicken dish slow-cooked in a sweet and tangy lemonade sauce infused with garlic and simple seasonings. This easy slow cooker recipe offers bright citrus flavors that perfectly complement rice or roasted vegetables, making it an ideal homemade weeknight dinner with minimal prep.

Ingredients

Chicken

  • 2 lbs boneless, skinless chicken breasts

Sauce

  • 1 cup lemonade
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Thickener

  • 1 tablespoon cornstarch
  • 2 tablespoons cold water

Garnish

  • Fresh parsley or lemon slices, for garnish

Instructions

  1. Prepare the Chicken: Place the boneless, skinless chicken breasts in the slow cooker, ensuring they are spread out evenly for consistent cooking.
  2. Mix the Sauce: In a bowl, thoroughly whisk together the lemonade, low-sodium soy sauce, honey, minced garlic, fresh lemon juice, paprika, salt, and black pepper until well combined to create a flavorful sauce.
  3. Add Sauce to Chicken: Pour the lemonade sauce mixture evenly over the chicken breasts in the slow cooker, allowing the meat to absorb the flavors as it cooks.
  4. Slow Cook the Chicken: Cover the slow cooker with its lid and cook the chicken on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours. The chicken should reach an internal temperature of 165°F (74°C) to ensure it’s fully cooked and safe to eat.
  5. Remove Chicken: Once cooked, carefully remove the chicken breasts from the slow cooker and place them on a serving plate to rest.
  6. Thicken the Sauce: Pour the cooking liquid from the slow cooker into a saucepan. In a separate small bowl, whisk together the cornstarch and cold water until smooth. Bring the cooking liquid to a gentle simmer over medium heat, then whisk in the cornstarch mixture. Continue cooking and stirring for 2 to 3 minutes until the sauce thickens to your desired consistency.
  7. Serve: Slice or shred the cooked chicken and either return it to the thickened sauce or spoon the sauce over the chicken on serving plates.
  8. Garnish: Finish by garnishing with fresh parsley or lemon slices to enhance the dish’s color and citrus aroma before serving.

Notes

  • Use fresh lemonade for a brighter, more natural citrus flavor or opt for your favorite store-bought lemonade to save time.
  • Chicken thighs can be used instead of breasts for a juicier texture as a substitution.
  • Serve this dish over white rice, brown rice, quinoa, or alongside steamed vegetables for a complete meal.
  • Leftover chicken and sauce can be stored in an airtight container in the refrigerator for up to 4 days.
