Ingredients
Crab and Breading
- 4 soft shell crabs, cleaned
- 1 cup flour
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- 1 egg
- 1/2 cup milk
- Oil for frying (vegetable or canola oil recommended)
Burger Assembly
- 4 burger buns (brioche recommended for extra richness)
- Lettuce leaves
- Tomato slices
- Pickles
- Mayonnaise or sauce of choice (spicy mayo suggested for extra flavor)
Instructions
- Prepare the seasoned flour: In a bowl, mix together the flour, salt, black pepper, and paprika until evenly combined. This will create the flavorful coating for the crabs.
- Whisk egg and milk: In a separate bowl, whisk the egg and milk together until fully blended to form the dredging liquid.
- Coat the crabs: Dip each cleaned soft shell crab into the egg mixture, ensuring it is fully coated, then dredge it thoroughly in the seasoned flour mixture. Set aside on a plate.
- Heat oil and fry crabs: Heat oil in a deep pan or skillet over medium-high heat until it reaches around 350°F (175°C). Fry the coated crabs carefully until they are crispy and golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
- Toast the buns: Lightly toast the burger buns either in a toaster, oven, or on a dry pan until golden and slightly crisp to add texture and warmth.
- Assemble the burgers: Spread mayonnaise or your sauce of choice on the buns. On the bottom bun, layer fresh lettuce leaves, tomato slices, and pickles. Place the fried soft shell crab on top, then cover with the top bun.
- Serve immediately: Serve the soft shell crab burgers hot for the best taste and texture. Accompany with your favorite sides or fries for a complete meal.
Notes
- Ensure crabs are properly cleaned before cooking to remove all innards and gills for a pleasant taste and texture.
- Using brioche buns adds a touch of richness and sweetness that complements the savory crab.
- Try adding spicy mayonnaise or sriracha mayo to enhance the burger’s flavor profile with a little heat.
- Do not overcrowd the pan while frying to maintain the oil temperature and achieve crispy results.
- Serve the burgers immediately after assembling to preserve the crispiness of the crab and freshness of the toppings.
