Ingredients

For the Crispy Rice

  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Salad

  • 2 cups English cucumber, diced
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup green onions, sliced
  • ½ cup shredded carrots
  • ¼ cup roasted peanuts or cashews
  • 1 tablespoon sesame seeds

For the Dressing

  • 3 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 small garlic clove, minced
  • ¼ teaspoon red pepper flakes (optional)


Instructions

  1. Preheat Oven: Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper to prepare for roasting the rice.
  2. Prepare Rice for Roasting: Spread the cooled rice evenly across the baking sheet. Drizzle with olive oil and sesame oil, then sprinkle garlic powder, paprika, salt, and black pepper over the rice. Toss gently to coat all grains evenly.
  3. Roast Rice: Spread the rice into an even layer and roast in the preheated oven for 25–30 minutes. Stir the rice once or twice during roasting to ensure even browning. Roast until the rice turns golden brown and crispy.
  4. Make Dressing: While the rice roasts, whisk together fresh lime juice, olive oil, soy sauce, honey or maple syrup, sesame oil, grated ginger, minced garlic, and optional red pepper flakes in a small bowl until well combined.
  5. Combine Salad Ingredients: In a large bowl, toss the diced cucumber, chopped cilantro, mint, parsley, sliced green onions, shredded carrots, roasted peanuts or cashews, and sesame seeds, ensuring even distribution.
  6. Cool Roasted Rice: Remove the rice from the oven and allow it to cool for a few minutes to avoid wilting the salad ingredients and preserve crunchiness.
  7. Assemble Salad: Add the crispy, cooled rice to the bowl with the salad ingredients. Drizzle the prepared dressing on top, then toss gently to combine everything evenly without crushing the crispy rice.
