Ingredients

For the Crispy Chickpeas

  • 2 (15 oz) cans chickpeas, drained, rinsed, and patted dry
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ¼ tsp garlic powder
  • ½ tsp salt

For the Salad

  • 4 cups romaine lettuce, chopped
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, diced

For the Chili Lime Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp honey or maple syrup
  • ½ tsp chili powder
  • ¼ tsp cumin
  • Salt and black pepper, to taste


Instructions

  1. Preheat the oven. Set your oven to 400°F (200°C) to prepare for roasting the chickpeas.
  2. Dry the chickpeas. Pat the drained and rinsed chickpeas thoroughly with paper towels to remove excess moisture for crispiness.
  3. Season the chickpeas. Toss the chickpeas with olive oil, chili powder, smoked paprika, garlic powder, and salt until evenly coated.
  4. Arrange on baking sheet. Spread the seasoned chickpeas in a single layer on a baking sheet to ensure even roasting.
  5. Roast chickpeas. Bake for 25–30 minutes, shaking the pan halfway to promote even cooking, until they are crispy and golden brown.
  6. Prepare the salad base. While chickpeas roast, combine chopped romaine lettuce, diced cucumber, halved cherry tomatoes, diced red bell pepper, thinly sliced red onion, chopped cilantro, and diced avocado in a large salad bowl.
  7. Make the dressing. In a small bowl, whisk together olive oil, fresh lime juice, honey or maple syrup, chili powder, cumin, salt, and black pepper until well emulsified.
  8. Combine salad and chickpeas. Add the crispy roasted chickpeas to the large bowl with the vegetables.
  9. Add dressing and toss. Drizzle the chili lime dressing over the salad and gently toss everything to combine flavors evenly.
