Ingredients
For the Crispy Chickpeas
- 2 (15 oz) cans chickpeas, drained, rinsed, and patted dry
- 1 tbsp olive oil
- 1 tsp chili powder
- ½ tsp smoked paprika
- ¼ tsp garlic powder
- ½ tsp salt
For the Salad
- 4 cups romaine lettuce, chopped
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- ¼ cup red onion, thinly sliced
- ¼ cup fresh cilantro, chopped
- 1 avocado, diced
For the Chili Lime Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tsp honey or maple syrup
- ½ tsp chili powder
- ¼ tsp cumin
- Salt and black pepper, to taste
Instructions
- Preheat the oven. Set your oven to 400°F (200°C) to prepare for roasting the chickpeas.
- Dry the chickpeas. Pat the drained and rinsed chickpeas thoroughly with paper towels to remove excess moisture for crispiness.
- Season the chickpeas. Toss the chickpeas with olive oil, chili powder, smoked paprika, garlic powder, and salt until evenly coated.
- Arrange on baking sheet. Spread the seasoned chickpeas in a single layer on a baking sheet to ensure even roasting.
- Roast chickpeas. Bake for 25–30 minutes, shaking the pan halfway to promote even cooking, until they are crispy and golden brown.
- Prepare the salad base. While chickpeas roast, combine chopped romaine lettuce, diced cucumber, halved cherry tomatoes, diced red bell pepper, thinly sliced red onion, chopped cilantro, and diced avocado in a large salad bowl.
- Make the dressing. In a small bowl, whisk together olive oil, fresh lime juice, honey or maple syrup, chili powder, cumin, salt, and black pepper until well emulsified.
- Combine salad and chickpeas. Add the crispy roasted chickpeas to the large bowl with the vegetables.
- Add dressing and toss. Drizzle the chili lime dressing over the salad and gently toss everything to combine flavors evenly.
- Serve immediately. To enjoy maximum crunch and freshness, serve the salad right away.
Notes
- Add grilled chicken or shrimp to boost protein content and make it more filling.
- For the best crunch, add roasted chickpeas just before serving to prevent sogginess.
- If preparing in advance, store the dressing separately to maintain freshness.
- Swap romaine lettuce with mixed greens for added variety and nutrition.
