Description

A comforting and flavorful Italian main course featuring juicy chicken breasts simmered in a rich, creamy tomato sauce infused with garlic, onion, Italian seasoning, and fresh basil, perfect for an easy and satisfying dinner.

Ingredients

Chicken

  • 2 chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Tomato Basil Sauce

  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil, chopped

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the chicken: Heat the olive oil in a pan over medium heat. Add the chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side depending on thickness. Remove the chicken and set aside.
  3. Sauté aromatics: In the same pan, add the chopped onion and minced garlic. Cook over medium heat until the onion becomes translucent and fragrant, about 3-4 minutes.
  4. Add tomatoes and seasoning: Pour in the crushed tomatoes and sprinkle the Italian seasoning. Stir well to combine and let the mixture cook for 2-3 minutes to blend flavors.
  5. Create the creamy sauce: Stir in the heavy cream and reduce the heat to low. Let the sauce simmer gently for 3-4 minutes until it thickens slightly.
  6. Finish cooking the chicken: Return the chicken breasts to the pan, spooning sauce over them. Cover and cook for another 5-7 minutes or until the chicken is fully cooked through (internal temperature of 165°F/75°C).
  7. Add fresh basil and serve: Remove the pan from heat, stir in the fresh chopped basil, and serve immediately while hot.

Notes

  • Serve with pasta, rice, or mashed potatoes for a complete meal.
  • For extra richness, sprinkle freshly grated Parmesan cheese on top before serving.
  • Use fresh basil rather than dried for the best flavor and aroma.
  • Chicken can be substituted with thigh meat if preferred.
  • Adjust seasoning with additional salt and pepper to taste.
