Ingredients
Pasta and Vegetables
- 8 ounces rotini or bow-tie pasta
- 1 cup canned black beans, drained and rinsed
- 1 cup corn (fresh, canned, or thawed frozen corn)
- 1 cup cherry tomatoes, halved
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/2 cup cheddar cheese, shredded
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
Dressing
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon fresh lime juice
- 1 tablespoon taco seasoning
- 1/4 cup salsa
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Cook Pasta: Cook the pasta according to package directions until tender. Drain and rinse briefly under cool water to stop cooking and cool it down.
- Drain Pasta Thoroughly: Let the pasta drain well to remove excess water, ensuring the salad isn’t watery.
- Prepare Dressing: In a large bowl, combine mayonnaise, sour cream, lime juice, taco seasoning, salsa, garlic powder, and black pepper. Whisk until smooth and evenly blended.
- Toss Pasta with Dressing: Add the cooled pasta to the dressing and stir to coat every piece thoroughly.
- Add Vegetables and Cheese: Stir in black beans, corn, cherry tomatoes, red bell pepper, red onion, shredded cheddar cheese, and green onions. Toss gently until everything is evenly combined.
- Fold in Cilantro: Add fresh chopped cilantro and fold it through the salad for a burst of fresh flavor.
- Chill Before Serving: Refrigerate the salad for at least 20 minutes to let flavors marry and the dressing set in.
- Serve: Toss gently again just before serving and taste for seasoning, adjusting salt or pepper if needed.
Notes
- This pasta salad can be made several hours ahead and stored in the refrigerator for up to 3 days.
- For a heartier version, add cooked ground beef, chicken, turkey, or shredded rotisserie chicken.
- Add jalapeños, hot salsa, cayenne pepper, or pepper jack cheese to give the salad a spicy kick.
- If the pasta absorbs too much dressing overnight, stir in a spoonful of sour cream or mayonnaise before serving.
- Use plain Greek yogurt as a healthier substitute for sour cream if desired.
- Add avocado just before serving to prevent browning and keep it fresh.
- Frozen corn should be thawed and drained well before adding to the salad.
- Pastas like rotini, bow-tie, shells, or penne work best because their shapes hold the dressing well.
