Description

Creamy Taco Pasta Salad is a vibrant and flavorful combination of tender pasta, seasoned taco flavors, crunchy vegetables, black beans, and cheddar cheese all tossed in a creamy, zesty dressing. Perfect for make-ahead lunches, potlucks, picnics, and casual dinners, this salad blends the best of pasta salad with bold Southwestern-inspired ingredients for a crowd-pleasing dish.

Ingredients

Pasta and Vegetables

  • 8 ounces rotini or bow-tie pasta
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn (fresh, canned, or thawed frozen corn)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup cheddar cheese, shredded
  • 2 green onions, sliced
  • 1/4 cup fresh cilantro, chopped

Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon fresh lime juice
  • 1 tablespoon taco seasoning
  • 1/4 cup salsa
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  1. Cook Pasta: Cook the pasta according to package directions until tender. Drain and rinse briefly under cool water to stop cooking and cool it down.
  2. Drain Pasta Thoroughly: Let the pasta drain well to remove excess water, ensuring the salad isn’t watery.
  3. Prepare Dressing: In a large bowl, combine mayonnaise, sour cream, lime juice, taco seasoning, salsa, garlic powder, and black pepper. Whisk until smooth and evenly blended.
  4. Toss Pasta with Dressing: Add the cooled pasta to the dressing and stir to coat every piece thoroughly.
  5. Add Vegetables and Cheese: Stir in black beans, corn, cherry tomatoes, red bell pepper, red onion, shredded cheddar cheese, and green onions. Toss gently until everything is evenly combined.
  6. Fold in Cilantro: Add fresh chopped cilantro and fold it through the salad for a burst of fresh flavor.
  7. Chill Before Serving: Refrigerate the salad for at least 20 minutes to let flavors marry and the dressing set in.
  8. Serve: Toss gently again just before serving and taste for seasoning, adjusting salt or pepper if needed.

Notes

  • This pasta salad can be made several hours ahead and stored in the refrigerator for up to 3 days.
  • For a heartier version, add cooked ground beef, chicken, turkey, or shredded rotisserie chicken.
  • Add jalapeños, hot salsa, cayenne pepper, or pepper jack cheese to give the salad a spicy kick.
  • If the pasta absorbs too much dressing overnight, stir in a spoonful of sour cream or mayonnaise before serving.
  • Use plain Greek yogurt as a healthier substitute for sour cream if desired.
  • Add avocado just before serving to prevent browning and keep it fresh.
  • Frozen corn should be thawed and drained well before adding to the salad.
  • Pastas like rotini, bow-tie, shells, or penne work best because their shapes hold the dressing well.
