- 1 cup Arborio rice
- 200 g beef steak, cut into small pieces
- 150 g shrimp or mixed seafood

- 4 cups warm beef or chicken broth
- 2 tablespoons butter

Instructions
- Sear the Steak: Heat olive oil in a pan over medium-high heat. Add the small steak pieces and sear them until browned on all sides, about 2-3 minutes. Remove the steak from the pan and set aside.
- Cook the Seafood: In the same pan, add the shrimp or mixed seafood and cook just until the shrimp turn pink and opaque, about 1-2 minutes per side. Remove and set aside with the steak.
- Sauté Aromatics: Reduce heat to medium, add the finely chopped onion and minced garlic to the pan. Cook until soft and fragrant, about 3-4 minutes, stirring frequently to prevent browning.
- Toast the Rice: Add the Arborio rice to the pan with the onions and garlic. Stir continuously and toast the rice for 1–2 minutes until it becomes slightly translucent along the edges.
- Add Broth Gradually: Begin adding the warm beef or chicken broth one ladle at a time, stirring continuously. Allow each addition to be mostly absorbed before adding the next. This gradual addition helps the rice release its starches, creating a creamy texture.
- Cook Until Creamy: Continue this process of adding broth and stirring for about 20 minutes, or until the rice is tender but still has a slight bite (al dente).
- Finish with Butter and Cheese: Stir in the butter and grated Parmesan cheese until fully melted and incorporated, giving the risotto its signature creaminess and rich flavor.
- Combine Surf & Turf: Return the seared steak and cooked seafood to the pan. Gently mix to combine and warm throughout without overcooking the seafood.
- Season and Garnish: Season with salt and freshly ground black pepper to taste. Garnish with chopped fresh parsley and serve immediately for best texture and flavor.
