Ingredients

Chicken

  • Salt & pepper, to taste
  • 1 tsp fresh thyme

Mushroom Sauce

  • 2 cups cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan


Instructions

  1. Prepare the chicken: Season the chicken breasts evenly with salt, pepper, and fresh thyme. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Sear the chicken: Place the chicken breasts in the hot oil and cook for about 5-6 minutes per side, or until golden brown on both sides. Remove the chicken from the skillet and set aside.
  3. Sauté mushrooms and garlic: In the same skillet, add the sliced cremini mushrooms and minced garlic. Cook for 4-5 minutes, stirring occasionally, until the mushrooms soften and release their juices.
