Creamy Layered Blueberry Ice Pops are a delightful frozen treat featuring vibrant layers of sweet blueberry puree and smooth Greek yogurt. Enhanced with honey or maple syrup and a touch of lemon, these ice pops offer a refreshing balance of tart and creamy flavors, perfect for cooling off during hot summer days, satisfying afternoon snacks, or serving at family gatherings.
Ingredients
Blueberry Layer
- 1 1/2 cups fresh or frozen blueberries
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- 1 tablespoon water, if needed
Creamy Layer
- 1 cup plain Greek yogurt
- 1/4 cup milk or coconut milk
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
Instructions
- Prepare Blueberry Mixture: Add the blueberries, honey or maple syrup, and lemon juice to a small saucepan. Cook over medium heat for 5–7 minutes, stirring occasionally, until the blueberries soften and release their juices.
- Blend and Cool: Mash the blueberries with a fork or blend until smooth. Add a tablespoon of water if the mixture is too thick. Let the blueberry mixture cool completely to avoid melting the yogurt layers later.
- Make Yogurt Mixture: In a separate bowl, whisk together the Greek yogurt, milk or coconut milk, honey or maple syrup, and vanilla extract until smooth and creamy.
- Layer Popsicles: Spoon a layer of blueberry mixture into each ice pop mold, followed by a layer of the yogurt mixture. Continue alternating layers until the molds are nearly full, leaving a little room at the top for expansion during freezing.
- Insert Sticks: Place the ice pop sticks into the molds according to the manufacturer’s instructions, ensuring they stand upright.
- Freeze: Freeze the molds for at least 6 hours or overnight until the ice pops are completely solid and firm.
- Remove and Serve: To release the pops, briefly run the outside of the molds under warm water and gently pull out the popsicles. Serve immediately or store them in the freezer until ready to enjoy.
Notes
- Use fresh or frozen blueberries; both work well for this recipe.
- For a swirled visual effect, gently run a skewer through the layers before freezing.
- To make dairy-free versions, substitute Greek yogurt with thick coconut yogurt and use coconut milk with maple syrup.
- Adjust sweetness by tasting the blueberry mixture before freezing and add additional honey or syrup as needed.
- For a smoother texture, blend and strain the blueberry mixture to remove skins if desired.
- Store frozen pops in their molds or wrap individually in plastic wrap, then place in a freezer-safe container for up to 2 months.
