Description

A creamy and comforting orzo pasta featuring sweet corn, tender zucchini, garlic, Parmesan, and fresh herbs. This easy one-pan stovetop dish is light, flavorful, and perfect as a vegetarian main course or a delicious side dish ideal for a quick weeknight meal or a summer gathering.

Ingredients

Orzo and Vegetables

  • 1½ cups orzo
  • 2 medium zucchini, diced
  • 1½ cups corn kernels, fresh or frozen
  • 1 small onion, finely diced
  • 3 cloves garlic, minced

Liquids and Seasonings

  • 2 tbsp olive oil
  • 3 cups vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • ¼ tsp red pepper flakes (optional)

Instructions

  1. Heat the Oil and Cook Vegetables: Heat olive oil in a large skillet over medium heat. Add the finely diced onion and diced zucchini, cooking for 4 to 5 minutes until they begin to soften.
  2. Add Garlic and Corn: Stir in minced garlic and corn kernels and cook for an additional 1 to 2 minutes to release their flavors.
  3. Toast the Orzo: Stir in the orzo pasta to the skillet and toast it for about 1 minute, ensuring it is well coated and slightly toasted.
  4. Add Broth and Seasonings: Pour in the vegetable broth, then add Italian seasoning, salt, black pepper, and optional red pepper flakes. Bring the mixture to a gentle simmer.
  5. Simmer Until Orzo is Tender: Let the orzo cook uncovered for 9 to 11 minutes, stirring occasionally, until the orzo is tender and the mixture becomes creamy.
  6. Incorporate Cream and Cheese: Stir in the heavy cream and grated Parmesan cheese. Continue cooking for another 1 to 2 minutes until the cheese melts and creates a creamy sauce.
  7. Finish with Lemon and Herbs: Remove from heat, then stir in fresh lemon juice and chopped parsley for brightness and freshness.
  8. Serve Warm: Serve the creamy corn and zucchini orzo warm, optionally garnished with extra Parmesan cheese.

Notes

  • Add a splash of vegetable broth if the orzo becomes too thick during cooking.
  • For a lighter version, substitute the heavy cream with milk or half-and-half.
  • Incorporate additional vegetables such as spinach, peas, or cherry tomatoes to boost nutrition and variety.
  • For extra protein, serve the dish alongside grilled chicken, shrimp, or white beans.
