Sauce and Vegetables

  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1/2 cup cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil


Instructions

  1. Season the chicken: Pat the chicken breasts dry, then evenly season both sides with salt and black pepper to enhance flavor.
  2. Cook the chicken: Heat the olive oil and butter together in a large pan over medium heat. Add the chicken breasts and cook until they are golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the pan and set aside.
  3. Cook the mushrooms: In the same pan, add the sliced mushrooms and sauté until they are softened and release their moisture, about 5 minutes.

  5. Deglaze with Marsala wine: Pour the Marsala wine into the pan, scraping up any browned bits from the bottom. Let it simmer for a few minutes until the wine reduces slightly and concentrates in flavor.
  6. Add cream and return chicken: Stir the cream into the mushroom and wine mixture. Return the chicken breasts to the pan and spoon some sauce over them.
