Ingredients
Chicken
- 2 chicken breasts
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Sauce and Vegetables
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1/2 cup Marsala wine
- 1/2 cup cream
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions
- Season the chicken: Pat the chicken breasts dry, then evenly season both sides with salt and black pepper to enhance flavor.
- Cook the chicken: Heat the olive oil and butter together in a large pan over medium heat. Add the chicken breasts and cook until they are golden brown on both sides, about 4-5 minutes per side. Remove the chicken from the pan and set aside.
- Cook the mushrooms: In the same pan, add the sliced mushrooms and sauté until they are softened and release their moisture, about 5 minutes.
- Sauté garlic: Add the minced garlic to the mushrooms and cook for about 1 minute until fragrant, being careful not to burn it.
- Deglaze with Marsala wine: Pour the Marsala wine into the pan, scraping up any browned bits from the bottom. Let it simmer for a few minutes until the wine reduces slightly and concentrates in flavor.
- Add cream and return chicken: Stir the cream into the mushroom and wine mixture. Return the chicken breasts to the pan and spoon some sauce over them.
- Finish cooking: Cook everything together until the sauce thickens and the chicken is thoroughly cooked through, about 5-7 minutes more.
- Serve warm: Plate the chicken with the creamy mushroom Marsala sauce spooned over the top. Garnish with fresh parsley if desired and serve with pasta or mashed potatoes for a complete meal.
Notes
- Serve with pasta or mashed potatoes to soak up the delicious sauce.
- If not available, use cooking Marsala wine which is typically fortified and sweet.
- Garnish with freshly chopped parsley to add color and freshness.
