Description

Tender chicken breasts cooked in a sweet and tangy cranberry-orange sauce that’s perfect for weeknight dinners or holiday meals. The combination of citrus and cranberries creates a bright, flavorful dish everyone will love.

Ingredients

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • 1 tsp garlic powder

Sauce

  • 1 cup cranberry sauce
  • ½ cup orange juice
  • 1 tbsp orange zest
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Garnish

  • Fresh parsley, for garnish

Instructions

  1. Season Chicken: Season the chicken breasts evenly with salt, black pepper, and garlic powder to enhance their flavor before cooking.
  2. Heat Oil: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat until shimmering and hot.
  3. Cook Chicken: Add the seasoned chicken breasts to the skillet and cook for 5 to 6 minutes on each side until they are golden brown and cooked through. Remove the chicken and set aside.
  4. Prepare Sauce: Using the same skillet, whisk together cranberry sauce, orange juice, orange zest, Dijon mustard, and honey until the mixture is smooth and combined.
  5. Simmer Sauce: Let the sauce simmer for 3 to 5 minutes until it thickens slightly, intensifying the flavors.
  6. Return Chicken to Sauce: Place the cooked chicken breasts back in the skillet, spoon the sauce over them, and simmer for an additional 2 to 3 minutes to heat everything through and allow the flavors to meld.
  7. Garnish and Serve: Sprinkle freshly chopped parsley over the top of the chicken and serve immediately for a delicious and colorful presentation.

Notes

  • Serve with rice, mashed potatoes, or roasted vegetables for a complete meal.
  • Use fresh cranberries instead of cranberry sauce when in season to make a homemade sauce.
  • Add a pinch of cinnamon to the sauce for a warm, holiday-inspired flavor.
