Description

These crispy Corn Fritters are golden on the outside, soft and fluffy on the inside, and packed with sweet corn kernels. They make a delicious appetizer, side dish, or light meal and are ready in just 25 minutes. Serve them with sour cream, spicy mayo, or your favorite dipping sauce for a tasty treat.

Ingredients

Main Ingredients

  • 2 cups corn kernels (fresh, frozen and thawed, or canned and drained)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 large eggs
  • ¼ cup milk
  • 2 green onions, finely sliced
  • ¼ cup grated Parmesan cheese (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons chopped fresh parsley (optional)
  • 2–3 tablespoons vegetable oil, for frying

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the flour, baking powder, garlic powder, paprika, salt, and black pepper until well combined.
  2. Prepare wet mixture: In a separate bowl, beat the eggs and milk together until the mixture is smooth and uniform.
  3. Combine wet and dry ingredients: Pour the wet egg and milk mixture into the bowl with dry ingredients and stir gently until a thick batter forms.
  4. Add corn and flavorings: Fold in the corn kernels, finely sliced green onions, grated Parmesan cheese, and chopped parsley until evenly distributed throughout the batter.
  5. Heat oil: Warm the vegetable oil in a large skillet over medium heat, ensuring it is hot enough for frying but not smoking.
  6. Cook fritters: Using about 2 tablespoons of batter per fritter, carefully scoop the mixture into the skillet and gently flatten each with the back of a spoon. Fry each side for 3 to 4 minutes until golden brown and cooked through.
  7. Drain excess oil: Transfer cooked fritters to a paper towel-lined plate to absorb any excess oil and keep them crispy.
  8. Serve: Serve the fritters warm with sour cream, yogurt dip, or your preferred dipping sauce for the best taste experience.

Notes

  • Fresh corn provides the sweetest flavor, but frozen or canned corn works well too.
  • For extra spice, add a pinch of cayenne pepper or chopped jalapeño to the batter.
  • Keep cooked fritters warm in a 200°F (95°C) oven while cooking the remaining batches.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a skillet or air fryer before serving.
