Description

This copycat stuffed chicken recipe offers a delicious homemade twist on a classic dish, featuring tender chicken breasts filled with a creamy spinach and cheese mixture. The chicken is seared to create a crispy exterior before being baked to perfection, resulting in a flavorful and satisfying meal perfect for dinner.

Ingredients

Chicken

  • 4 chicken breasts
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Filling

  • ½ cup cream cheese
  • ½ cup spinach (fresh or frozen, thawed and drained if frozen)
  • ½ cup shredded cheese (such as mozzarella or cheddar)
  • 1 tsp garlic powder

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to prepare for baking the stuffed chicken breasts.
  2. Prepare Chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, creating enough space to hold the filling without cutting all the way through.
  3. Mix Filling: In a bowl, combine the cream cheese, spinach, shredded cheese, and garlic powder until well mixed.
  4. Stuff Chicken: Spoon the filling mixture into each chicken breast pocket, ensuring the filling is evenly distributed. Use toothpicks if necessary to secure the opening and keep the filling inside while cooking.
  5. Season Chicken: Season each stuffed chicken breast generously with salt and pepper on all sides.
  6. Sear Chicken: Heat olive oil in a skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear each side for about 3 minutes until golden brown to lock in flavors and create a crispy exterior.
  7. Bake Chicken: Transfer the seared chicken breasts to an oven-safe dish and bake in the preheated oven for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.
  8. Rest and Serve: Remove the chicken from the oven and let it rest for a few minutes before serving. Remove toothpicks and serve with your choice of sides such as rice or vegetables.

Notes

  • Use toothpicks to secure the chicken pocket and keep the filling inside during cooking.
  • For extra flavor, add chopped sun-dried tomatoes to the filling mixture.
  • Serve this dish alongside steamed vegetables, rice, or a fresh salad for a complete meal.
