Instructions

  1. Combine Ingredients: Add the roughly chopped cucumber, ripe avocado, plain Greek yogurt, fresh cilantro, fresh parsley, lime juice, olive oil, garlic, salt, black pepper, ground cumin, and cold water or vegetable broth to a blender.
  2. Blend Until Smooth: Blend on high speed until the mixture is completely smooth and creamy. If the soup is too thick, add a little more cold water to reach your preferred consistency.
  3. Taste and Adjust: Sample the soup and adjust the lime juice, salt, or pepper as needed to balance the flavors perfectly.
  4. Chill the Soup: Cover the blender or transfer the soup to a container, then refrigerate for at least 30 minutes to allow the soup to become thoroughly chilled and the flavors to meld.
