Description

Coconut-Rum Cake Pops are delightful, bite-sized treats featuring moist vanilla cake mixed with creamy vanilla frosting, enhanced by coconut and rum flavors. Each pop is coated in smooth white chocolate and rolled in shredded coconut, creating a tropical and festive dessert perfect for summer parties, birthdays, holidays, and dessert tables.

Ingredients

Cake Mixture

  • 1 baked vanilla cake (approximately 9 inches), cooled
  • 1/2 cup vanilla frosting
  • 1/2 teaspoon coconut extract
  • 1–2 tablespoons rum or 1 teaspoon rum extract, to taste
  • 1/2 cup sweetened shredded coconut

Coating

  • 12 oz white chocolate or white candy melts
  • 1 tablespoon coconut oil (optional, for thinning)
  • Extra shredded coconut, for decorating

Other

  • 20–24 cake pop sticks

Instructions

  1. Cool the Cake: Allow the baked vanilla cake to cool completely to ensure the cake crumbs hold together well when mixed.
  2. Crumble Cake: Break the cooled cake into fine crumbs using your hands or a fork in a large mixing bowl.
  3. Mix Ingredients: Add the vanilla frosting, coconut extract, and rum or rum extract to the cake crumbs. Mix thoroughly until the mixture holds together when pressed but isn’t sticky.
  4. Add Coconut: Gently fold in the shredded coconut to distribute evenly throughout the mixture.
  5. Form Cake Balls: Roll the mixture into 20–24 evenly sized balls and arrange them on a parchment-lined baking sheet.
  6. Chill: Refrigerate the cake balls for 30–45 minutes until firm enough to dip.
  7. Melt Coating: Melt the white chocolate or candy melts according to package instructions. Stir in coconut oil if the chocolate is too thick, to thin it out for dipping.
  8. Insert Sticks: Dip the tip of each cake pop stick into the melted chocolate, then push it halfway into each chilled cake ball to secure.
  9. Dip Cake Pops: Fully dip each cake pop into the melted chocolate, allowing excess coating to drip off.
  10. Add Topping: While the coating is still wet, sprinkle extra shredded coconut over the cake pops for decoration.
  11. Set Pops: Stand the cake pops upright in a cake pop stand or foam block and allow the chocolate coating to set completely at room temperature or in the fridge.
  12. Store and Serve: Refrigerate the finished cake pops until ready to serve to maintain freshness and firmness.

Notes

  • Rum Flavor: Use rum extract for a non-alcoholic version. For alcohol-free recipes, ensure cake and frosting are free from alcohol-based flavorings.
  • Avoid Soft Pops: Add frosting gradually to achieve a consistency that holds when pressed but isn’t sticky to avoid overly soft cake pops.
  • Chocolate Coating: Add coconut oil to the melted white chocolate if the coating is too thick for smoother dipping.
  • Decorating Ideas: Consider drizzling with dark chocolate or using toasted coconut for varied texture and flavor.
  • Storage: Store cake pops in an airtight container in the refrigerator for up to 5 days.
  • Make Ahead: You can prepare and refrigerate the cake balls up to one day before dipping and decorating.
