Description

These cilantro lime chicken tacos feature tender, juicy chicken breasts or thighs marinated in fresh lime juice, garlic, and cilantro, then cooked to perfection on the stovetop or grill. Served in warm corn or flour tortillas and topped with avocado, shredded lettuce, tomatoes, red onion, extra cilantro, and lime wedges, these tacos are a bright, flavorful, and easy weeknight meal that captures the vibrant flavors of Mexican cuisine.

Ingredients

For the Chicken:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Serving:

  • 8 small corn or flour tortillas
  • Diced avocado
  • Shredded lettuce
  • Diced tomatoes
  • Red onion, thinly sliced
  • Extra cilantro leaves
  • Lime wedges
  • Salsa or sour cream (optional)

Instructions

  1. Marinate the Chicken: Place the chicken breasts or thighs in a large bowl or shallow dish. Add lime juice, olive oil, minced garlic, chopped cilantro, chili powder, ground cumin, paprika, salt, and black pepper. Toss everything together until the chicken is evenly coated with the marinade. Let it marinate at room temperature for at least 20 minutes or refrigerate for up to 4 hours to enhance the flavors.
  2. Cook the Chicken: Preheat a large skillet or grill over medium-high heat. Once hot, place the marinated chicken pieces onto the cooking surface. Cook the chicken for about 5 to 7 minutes per side, depending on thickness, until the internal temperature reaches 165°F (74°C) and the meat is cooked through.
  3. Rest and Slice: Transfer the cooked chicken to a cutting board and allow it to rest for 5 minutes to retain its juices. Then slice or chop the chicken into bite-sized pieces suitable for taco fillings.
  4. Warm the Tortillas: Heat the corn or flour tortillas on the skillet for about 30 seconds per side until warm and slightly toasted for extra flavor.
  5. Assemble the Tacos: Fill each warmed tortilla with pieces of the cooked cilantro lime chicken. Top with diced avocado, shredded lettuce, diced tomatoes, sliced red onion, additional cilantro leaves, and your choice of salsa or sour cream. Serve immediately with lime wedges on the side for an extra burst of citrus.

Notes

  • Chicken thighs tend to stay juicier and more flavorful compared to breasts, but both work well.
  • For a spicier kick, add jalapeño slices or cayenne pepper to the marinade.
  • Warm tortillas directly in a dry skillet to get lightly toasted and crispy edges.
  • Leftover cooked chicken can be stored in the refrigerator for up to 4 days and reheated for salads, rice bowls, or additional tacos.
