Ingredients
Chicken Mixture
- 2 cups cooked chicken, shredded

Quesadillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 flour tortillas
- 1 tbsp oil or butter
Instructions
- Prepare the Chicken Mixture: In a bowl, combine the shredded cooked chicken with lime juice, chopped fresh cilantro, garlic powder, and cumin. Mix thoroughly to ensure the chicken is evenly coated with the seasoning.
- Heat the Skillet: Place a skillet over medium heat and add the oil or butter to coat the pan. Allow it to heat until shimmering but not smoking.
- Assemble the Quesadilla: Place one flour tortilla in the heated skillet. Sprinkle a layer of shredded cheese evenly over the tortilla. Then add an even layer of the cilantro-lime chicken mixture, followed by another sprinkle of cheese on top to help the quesadilla stick together.
- Top and Cook: Place a second tortilla on top to cover the fillings. Cook for about 3-4 minutes until the bottom tortilla turns golden brown and crispy.
- Flip Carefully: Using a spatula, carefully flip the quesadilla to cook the other side until golden brown and the cheese inside is melted, about another 3-4 minutes.
- Slice and Serve: Remove the quesadilla from the skillet and let it rest for a minute before slicing into wedges. Serve warm with your favorite sides like sour cream, salsa, or guacamole.
