Ingredients

Chicken Mixture

Quesadillas

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1 tbsp oil or butter


Instructions

  1. Prepare the Chicken Mixture: In a bowl, combine the shredded cooked chicken with lime juice, chopped fresh cilantro, garlic powder, and cumin. Mix thoroughly to ensure the chicken is evenly coated with the seasoning.
  2. Heat the Skillet: Place a skillet over medium heat and add the oil or butter to coat the pan. Allow it to heat until shimmering but not smoking.
  3. Assemble the Quesadilla: Place one flour tortilla in the heated skillet. Sprinkle a layer of shredded cheese evenly over the tortilla. Then add an even layer of the cilantro-lime chicken mixture, followed by another sprinkle of cheese on top to help the quesadilla stick together.
  4. Top and Cook: Place a second tortilla on top to cover the fillings. Cook for about 3-4 minutes until the bottom tortilla turns golden brown and crispy.
