Ingredients

For the Churros

  • 1 cup water
  • 2 tbsp unsalted butter
  • 1 tbsp granulated sugar
  • ¼ tsp salt
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 tsp vanilla extract
  • Vegetable oil, for frying

For the Cinnamon Sugar

  • ½ cup granulated sugar
  • 1 tsp ground cinnamon

For the Chocolate Sauce

  • 1 cup whole milk
  • 4 oz (115 g) dark chocolate, chopped
  • 1 tbsp granulated sugar
  • 1 tsp cornstarch
  • 1 tbsp cold water
  • ½ tsp vanilla extract


Instructions

  1. Make the dough: Combine water, butter, sugar, and salt in a saucepan over medium heat and bring to a gentle boil. Remove from heat and stir in the flour until the dough forms a thick, cohesive ball.
  2. Incorporate egg and vanilla: Allow dough to cool for 5 minutes, then mix in the egg and vanilla extract until the dough is smooth and uniform.
  3. Heat oil for frying: Pour about 2 inches of vegetable oil into a deep pot and heat to 350°F (175°C), maintaining this temperature for optimal frying.
  4. Pipe churros into oil: Transfer dough to a piping bag equipped with a large star tip and pipe 4–6 inch strips directly into the hot oil. Use kitchen scissors to cut the dough as you pipe.
  5. Fry churros: Fry the churros for 2–3 minutes on each side or until they turn golden brown and crisp.
  6. Drain churros: Remove churros from oil and place on a paper towel-lined plate to drain excess oil.
  7. Coat with cinnamon sugar: Mix granulated sugar and ground cinnamon together, then toss the warm churros in this mixture until evenly coated.
  8. Prepare chocolate sauce: In a saucepan, heat whole milk and chopped dark chocolate over low heat, stirring until chocolate is fully melted and mixture is smooth.
  9. Thicken chocolate sauce: Mix cornstarch with cold water to create a slurry, then stir it into the chocolate mixture. Add sugar and vanilla extract, and cook for 1–2 minutes until the sauce thickens slightly.
  10. Serve: Plate the churros with the warm chocolate sauce for dipping and enjoy immediately.
