Instructions

  1. Prepare the Pan: Grease a 9×13-inch baking dish to ensure the treats do not stick once set.
  2. Melt Butter: In a large saucepan over low heat, melt the ¼ cup unsalted butter gently until fully liquid.
  3. Add Marshmallows: Add 4 cups mini marshmallows to the melted butter and stir continuously over low heat until the marshmallows are completely melted and smooth.
  4. Combine Cereal: Remove the saucepan from heat and immediately fold in the 6 cups Rice Krispies cereal, mixing thoroughly so that all cereal is coated evenly with the marshmallow mixture.
  5. Press in Pan: Press the cereal and marshmallow mixture gently into the prepared baking dish, spreading it out evenly. Avoid pressing too firmly so the treats remain soft and chewy.
  6. Cool Initial Layer: Allow the pressed cereal mixture to cool and set for about 20 minutes at room temperature.
  7. Melt Chocolate: In a microwave-safe bowl or double boiler, melt the 2 cups semi-sweet chocolate chips with 1 tablespoon coconut oil or shortening (if using) until the chocolate is smooth and fluid.
  8. Spread Chocolate: Spread the melted chocolate evenly over the top of the cooled cereal treats, creating a smooth chocolate layer.
