Ingredients

Instructions

  2. Combine in blender: Place the chopped tomatoes, cucumber, bell pepper, onion, garlic, olive oil, red wine vinegar, salt, and black pepper into a blender jar.
  3. Blend until smooth: Blend all ingredients on high speed until the mixture achieves a smooth and consistent texture.
  4. Adjust consistency: If a thinner soup is desired, add up to ½ cup of tomato juice and blend again until fully incorporated.
  5. Chill: Transfer the gazpacho soup to a container and refrigerate for at least 2 hours to develop flavors and serve cold.
