Description

Chicken Quesadillas are crispy flour tortillas filled with seasoned shredded chicken, melted Mexican cheese blend, and aromatic spices. Cooked in a skillet or griddle until golden and melty, they make a quick and delicious meal perfect for lunch, dinner, or game day. Serve with classic sides like salsa, guacamole, sour cream, and lime wedges for a complete Mexican-inspired experience.

Ingredients

Filling

  • 2 cups cooked shredded chicken
  • 2 cups shredded Mexican cheese blend
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ¼ cup chopped cilantro

Quesadillas

  • 4 large flour tortillas
  • 2 tbsp butter

For Serving

  • Salsa
  • Sour cream
  • Guacamole
  • Lime wedges

Instructions

  1. Prepare the seasoned chicken: In a bowl, combine the cooked shredded chicken with chili powder, garlic powder, cumin, smoked paprika, olive oil, and chopped cilantro. Mix thoroughly to evenly coat the chicken with spices and herbs.
  2. Heat the cooking surface: Place a large skillet or Blackstone griddle over medium heat and allow it to warm up adequately for cooking the quesadillas evenly.
  3. Butter the tortillas: Lightly spread butter on one side of each flour tortilla. The buttered side will be the outside that crisps up when cooked.
  4. Assemble the quesadilla: Place one tortilla butter-side down onto the heated skillet or griddle. On half of the tortilla, sprinkle an even layer of shredded Mexican cheese blend, then top with about half of the seasoned chicken mixture, and add extra cheese on top to help it bind when folded.
  5. Cook until golden and melty: Fold the tortilla over to cover the filling, forming a half-moon shape. Cook for 2–3 minutes on one side or until golden brown and crispy, then carefully flip and cook the other side for another 2–3 minutes until cheese is fully melted inside and the tortilla is crispy.
  6. Repeat for remaining quesadillas: Repeat steps 3 to 5 with the remaining tortillas and filling to make four quesadillas in total.
  7. Serve: Slice each quesadilla into wedges and serve warm with salsa, sour cream, guacamole, and lime wedges on the side for dipping and extra flavor.

Notes

  • Using rotisserie chicken saves preparation time while adding flavorful shredded meat.
  • Add sautéed peppers and onions to the filling for an extra layer of flavor and texture.
  • Cooking over medium heat ensures the tortillas crisp evenly without burning before the cheese melts.
