Instructions

  1. Sauté Vegetables: In a large pot, heat olive oil or butter over medium heat. Add diced onion, minced garlic, diced carrots, and diced celery. Sauté until the vegetables are softened and fragrant, about 5-7 minutes.
  2. Add Chicken and Broth: Stir in the shredded cooked chicken, chicken broth, dried thyme, Italian seasoning, salt, and pepper. Bring the mixture to a simmer over medium heat.
  3. Cook Gnocchi: Add the potato gnocchi to the simmering soup and cook for 3-4 minutes, or until the gnocchi float to the surface, indicating they are cooked through.
