Chicken Filling
- 3 cups cooked shredded chicken
- ½ cup sour cream
- 1 can diced green chilies (4 oz)
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 cup shredded Monterey Jack cheese
Enchiladas
- 8 flour tortillas (8-inch)
- 2 cups green enchilada sauce
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
Garnish
- Fresh cilantro, chopped (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the enchiladas.
- Make the Chicken Filling: In a large bowl, combine the cooked shredded chicken, sour cream, diced green chilies, garlic powder, onion powder, and 1 cup of shredded Monterey Jack cheese. Mix thoroughly to blend all ingredients evenly.
- Prepare Baking Dish: Lightly grease a 9×13-inch baking dish. Spread ½ cup of the green enchilada sauce evenly over the bottom to prevent sticking and to add flavor.
- Assemble Enchiladas: Lay out each flour tortilla and divide the chicken mixture evenly among them. Place the filling in the center of each tortilla, then roll tightly to enclose the filling.
- Arrange in Baking Dish: Place the rolled enchiladas seam-side down in the prepared baking dish to help keep them closed during baking.
- Add Sauce and Cheese: Pour the remaining 1½ cups of green enchilada sauce evenly over the top of the enchiladas. Then sprinkle the remaining 1 cup Monterey Jack and 1 cup cheddar cheese evenly over the sauce.
- Bake: Bake the enchiladas in the preheated oven for 25 to 30 minutes until the cheese is melted, bubbly, and golden brown on top.
- Garnish and Serve: Remove from oven and garnish with freshly chopped cilantro if desired. Serve warm for best flavor and texture.
