Ingredients
For the Chicken Drumsticks
- 6–8 chicken drumsticks
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1 tbsp olive oil
- Salt and pepper to taste
For the Coconut Rice
- 1 cup rice (preferably jasmine or basmati)
- 1 cup coconut milk
- 1 cup water
- Pinch of salt
Instructions
- Preheat the Oven: Set your oven to 200°C (400°F) to ensure it’s properly heated for baking the chicken drumsticks to juicy perfection.
- Prepare the Marinade: In a bowl, combine the soy sauce, honey, minced garlic, and grated ginger to create a flavorful marinade.
- Marinate the Chicken: Toss the chicken drumsticks in the marinade until evenly coated. Allow them to soak in the flavors for at least 10 minutes, or longer if time permits for deeper flavor.
- Arrange Drumsticks on Tray: Place the marinated chicken drumsticks on a baking tray lined with foil or parchment paper for easy cleanup.
- Bake the Drumsticks: Bake in the preheated oven for 35 to 40 minutes, turning the drumsticks halfway through cooking. Brush them with additional marinade during turning to enhance the glaze and moisture.
- Cook the Coconut Rice: While the chicken is baking, combine the rice, coconut milk, water, and a pinch of salt in a pot. Bring to a boil, then reduce heat to a simmer and cover. Cook until the rice is tender and fluffy, about 15-20 minutes.
- Serve: Plate the baked chicken drumsticks over a bed of the creamy coconut rice. Garnish with optional sesame seeds or sliced green onions for added color and texture.
Notes
- For more intense flavor, marinate the chicken for 2 hours or overnight in the refrigerator.
- Garnish with toasted sesame seeds or chopped green onions for extra aroma and crunch.
- Use gluten-free soy sauce to make this dish gluten-free.
- Adjust the sweetness by adding more or less honey according to your taste.
- Make sure to turn the chicken halfway to ensure even cooking and caramelization.
