Description

Juicy chicken drumsticks glazed in a sweet and savory honey soy sauce, served with creamy coconut rice. This recipe combines tender baked chicken with fragrant, tropical-flavored coconut rice for a delicious and satisfying main course that’s perfect for a family dinner or special occasion.

Ingredients

For the Chicken Drumsticks

  • 68 chicken drumsticks
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp olive oil
  • Salt and pepper to taste

For the Coconut Rice

  • 1 cup rice (preferably jasmine or basmati)
  • 1 cup coconut milk
  • 1 cup water
  • Pinch of salt

Instructions

  1. Preheat the Oven: Set your oven to 200°C (400°F) to ensure it’s properly heated for baking the chicken drumsticks to juicy perfection.
  2. Prepare the Marinade: In a bowl, combine the soy sauce, honey, minced garlic, and grated ginger to create a flavorful marinade.
  3. Marinate the Chicken: Toss the chicken drumsticks in the marinade until evenly coated. Allow them to soak in the flavors for at least 10 minutes, or longer if time permits for deeper flavor.
  4. Arrange Drumsticks on Tray: Place the marinated chicken drumsticks on a baking tray lined with foil or parchment paper for easy cleanup.
  5. Bake the Drumsticks: Bake in the preheated oven for 35 to 40 minutes, turning the drumsticks halfway through cooking. Brush them with additional marinade during turning to enhance the glaze and moisture.
  6. Cook the Coconut Rice: While the chicken is baking, combine the rice, coconut milk, water, and a pinch of salt in a pot. Bring to a boil, then reduce heat to a simmer and cover. Cook until the rice is tender and fluffy, about 15-20 minutes.
  7. Serve: Plate the baked chicken drumsticks over a bed of the creamy coconut rice. Garnish with optional sesame seeds or sliced green onions for added color and texture.

Notes

  • For more intense flavor, marinate the chicken for 2 hours or overnight in the refrigerator.
  • Garnish with toasted sesame seeds or chopped green onions for extra aroma and crunch.
  • Use gluten-free soy sauce to make this dish gluten-free.
  • Adjust the sweetness by adding more or less honey according to your taste.
  • Make sure to turn the chicken halfway to ensure even cooking and caramelization.
