Ingredients
Chicken and Vegetables
- 600 g boneless, skinless chicken breast, thinly sliced
- 4 cups broccoli florets
- 1 red bell pepper, sliced
- 2 tbsp olive or sesame oil
- 3 garlic cloves, minced
- 1 tsp grated fresh ginger
- 2 green onions, sliced
Sauce
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 1/3 cup water
- 1/2 tsp red pepper flakes (optional)
Instructions
- Prepare Sauce: Whisk together soy sauce, oyster sauce, rice vinegar, honey, sesame oil, cornstarch, water, and optional red pepper flakes in a small bowl until the cornstarch is completely dissolved. Set aside.
- Cook Chicken: Heat 1 tablespoon of oil in a large wok or skillet over high heat. Add the thinly sliced chicken and stir-fry for 5–7 minutes, stirring frequently until the chicken is golden brown and cooked through. Remove chicken from skillet and set aside.
- Cook Vegetables: Add the remaining 1 tablespoon of oil to the skillet. Toss in the broccoli florets and sliced red bell pepper. Stir-fry for 3–4 minutes until the vegetables are crisp-tender.
- Add Aromatics: Add the minced garlic and grated fresh ginger to the skillet with the vegetables. Cook while stirring for about 30 seconds until fragrant.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the ingredients and toss everything together thoroughly.
- Thicken Sauce and Finish Cooking: Continue cooking and stirring for 2–3 minutes until the sauce thickens and evenly coats the chicken and vegetables.
- Garnish and Serve: Remove from heat and garnish with sliced green onions. Serve immediately over steamed rice or noodles.
Notes
- Cut chicken into evenly sized pieces to ensure even and quick cooking.
- Feel free to add other vegetables like carrots, snap peas, mushrooms, or zucchini for extra variety and nutrition.
- For a gluten-free version, substitute soy sauce with tamari.
- Avoid overcrowding the pan to achieve proper searing; cook chicken in batches if necessary.
