Description

Chicken & Caramelized Onion Grilled Cheese is a comforting American sandwich featuring tender cooked chicken, sweet caramelized onions, and melted cheddar and provolone cheeses layered between slices of crispy, buttery sourdough bread. This easy stovetop recipe delivers a flavorful and satisfying lunch or dinner option with a perfect balance of savory and sweet.

Ingredients

Main Ingredients

  • 2 cups cooked chicken, shredded or chopped
  • 1 large yellow onion, thinly sliced
  • 8 slices sourdough or country bread
  • 4 slices sharp cheddar cheese
  • 4 slices provolone or mozzarella cheese

Cooking Fats and Seasonings

  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • 1 teaspoon brown sugar (optional)
  • 1 teaspoon balsamic vinegar (optional)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt, to taste
  • 1 tablespoon mayonnaise (optional, for spreading)

Instructions

  1. Caramelize the onions: Heat the olive oil and 1 tablespoon of butter in a skillet over medium-low heat. Add the thinly sliced onions and cook slowly for 15–20 minutes, stirring occasionally, until they become soft and golden brown. During the last few minutes, optionally stir in brown sugar and balsamic vinegar to enhance sweetness and depth. Season lightly with salt and then set aside.
  2. Prepare the chicken filling: In a bowl, mix the cooked shredded or chopped chicken with garlic powder, black pepper, and a pinch of salt to evenly season the meat for added flavor.
  3. Prepare the bread: Optionally spread a thin layer of mayonnaise on one side of each bread slice. Alternatively, butter the outside surfaces of each bread slice for crispiness and flavor.
  4. Assemble the sandwiches: Place four bread slices, buttered side down, on the skillet. Layer each with cheddar cheese slices, the seasoned chicken, caramelized onions, then provolone or mozzarella cheese. Top with the remaining bread slices, buttered side facing outward.
  5. Grill the sandwiches: Cook over medium-low heat for about 3–5 minutes on each side. Press gently with a spatula to ensure even grilling and melting. If the bread is browning too quickly and the cheese isn’t melting, reduce the heat to prevent burning.
  6. Serve: Remove the sandwiches from the skillet and let them rest for 1 minute to allow the cheese to settle before slicing. Serve warm.

Notes

  • Rotisserie chicken is a quick and convenient cooking shortcut for this recipe.
  • Slowly cook the onions over low heat to develop their natural sweetness and rich flavor.
  • Experiment with different cheese varieties like Swiss, Gruyère, or Monterey Jack for variation.
  • Cover the skillet briefly while grilling to help the cheese melt more effectively without over-browning the bread.
  • Pairs wonderfully with tomato soup, a fresh green salad, or pickles for a complete meal.
